The Cibare Project
South St. Louis County’s River City Casino is home to an exciting new Italian restaurant called Cibare, which was recently constructed by the professionals at A.J. Brown. Cibare Italian Kitchen is the culmination of an eight-month, $3 million renovation. With both rustic and modern details, the 84-seat space features an open floor plan divided by long, gracious arches accented with brick.
Cooking Up A New Kitchen
The showpiece of 3,750 square foot restaurant is the $200,000 pizza oven ($50,000 for the oven, plus $150,000 for the copper cladding and installation), which burns Missouri oak and hickory, assisted by natural gas. Initially, getting the oven into Cibare was a challenge for the construction team and even required removing and replacing the restaurant’s storefront. This process went smoothly, however, and the results speak for themselves.
The construction process consisted of A.J. Brown overseeing 25 subcontractors and moved along smoothly without any unexpected issues. Cibare is already experiencing success as a spacious, elegant eatery with a dynamic menu of traditionally inspired Italian cuisine.
